Most people are aware that raw eggs can harbor salmonella–a food-borne pathogen that can make you sick. But a lot of people don’t realize that soft-cooked eggs are just as risky.
The chance of salmonella contamination in eggs is relatively low, but the only way to completely eliminate the risk of food poisoning from eggs is to cook them until the yolks are completely hard.
(And contrary to what you may have heard, eggs from organic and/or pasture-raised hens are not immune to salmonella.)
