Elevated blood cholesterol levels can increase your risk of heart disease. Scientists used to believe that eating foods high in cholesterol (such as eggs and shrimp) contributed to high blood cholesterol levels. Now we know better. The amount of cholesterol in your diet actually has a fairly minimal effect on the amount of cholesterol in your blood. If you’re trying to lower your cholesterol, you’re better off limiting foods high in saturated fat (such as butter, cheese, and fatty meats).
