Quick Tip: Perfect Hard-Boiled Eggs
The trick to perfect hard-boiled eggs is not to overcook them. Here’s the easiest way to do it: Put eggs in the smallest saucepan in which they will fit in a single layer. Cover them with cold water and bring to a boil over medium heat. Boil them for one minute and then cover the pan and take it off the heat. When the water is luke warm or room temperature, pour off the water and refrigerate the eggs. Bonus tip: Hard-boiled eggs are easier to peel if they’re not too fresh when you cook them.
