How to Prepare Spaghetti Squash
Spaghetti squash is a variety of winter squash, related to butternut and acorn squash. Baked until tender and shredded with a fork, it turns into spaghetti-like strands. You can toss it with an equal amount of regular (cooked) spaghetti, or serve it all by itself with tomato sauce and a grating of parmesan cheese for a super-nutritious, low-carb, low-calorie meal.
To prepare, cut spaghetti squash in half, lengthwise, and scoop out seeds and fibers. Place squash halves skin side up on a foil-covered baking sheet and place in 350Âş oven for 40 minutes or until tender. (To test for doneness, flip the squash over and poke fork into flesh. When the squash yields easily, it is done.) Cool just until squash can be handled and then pull a fork through the squash lengthwise, shredding the squash into a bowl. Keep shredding until all the squash is removed from the shell. Discard the shells and top the squash as you would regular spaghetti.
