Easy Family Dinner Recipe: Crock-Pot Buffalo Ranch Chicken

If you’re anything like me, the word “easy” included in a recipe always grabs my attention.
Sometimes my days just fly by and then it’s dinnertime and there’s no plan. Well, here’s a super simple recipe that you can toss in the crockpot in the morning and forget about until you get home from work. Not only is it easy, but the list of ingredients is short – only 3 items!

Ingredients

2 pounds frozen boneless, skinless chicken breast

Hot wing sauce

1 envelope of ranch dressing mix
Directions
In the morning, plug in the crock-pot and set it on low. Add frozen chicken breasts and then pour the hot wing sauce over the chicken. I used about half the 17 oz bottle. Sprinkle the ranch dressing mix over the top. Put the lid on and then forget about it. Seriously, you can let this cook all day long. There is no perfect amount of cooking time here except, of course, that the chicken is cooked through.
About 30 minutes before dinner, shred the chicken breasts with two forks. This should be easy to do since the chicken has been cooking all day so it’s nice and tender. If it’s looking a little dry after shredding, add more hot wing sauce and give it a good stir. Allow the chicken to cook for about 30 more minutes and serve.
Serving Suggestions
Buffalo Ranch Tacos: Use either crunchy taco shells or soft corn tortillas. Fill with shredded buffalo chicken and top with shredded lettuce, crumbled blue cheese, and sour cream.
Buffalo Ranch Sliders: Use small slider rolls or pretzel rolls. Cut each roll in half and fill with the buffalo chicken. Top with a slice of cheddar cheese and jalapeno slices, if desired.
Buffalo Ranch Pizza: Preheat oven to 4250; while it’s heating, drizzle a large flour tortilla or a wrap with olive oil or avocado oil. Brush oil over the entire tortilla or wrap. Spread buffalo chicken mixture on the oil. Top with shredded cheddar cheese or crumbled blue cheese or feta. (or all 3!) Additional toppings you could add include: jalapeno slices, diced celery, chopped onion, sliced mushrooms, chopped red peppers, etc. Be creative! Put the pizza on a baking pan and bake in the oven for 10-15 minutes, making sure all cheese is melted. Drizzle with ranch or blue cheese dressing and serve.
All these serving suggestions are absolutely delicious. You can also just eat the chicken straight out of the crock-pot. But, please, use a fork.
