This delicious twist on an old breakfast standby will turn anyone into an oatmeal lover. Bake it at the beginning of the week and store in the fridge for a quick and easy breakfast. Baked Oatmeal Casserole

Ingredients
- 2 eggs
- 1/4 cup unsweetened applesauce
- 1 cup milk
- 2 teaspoons vanilla
- 3 tablespoons melted coconut oil (or butter)
- 4 tablespoons sugar
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 3 cups oatmeal
- 1 cup berries (blueberries, raspberries, strawberries, blackberries) use fresh or frozen
Directions
Preheat oven to 3500 and oil or butter a 2 1/2 quart baking dish. In a bowl, stir together the eggs, melted butter, applesauce, milk, and sugar. In another bowl, stir the oats, baking powder, and salt. Add dry ingredients to the wet mixture, stirring well. Gently stir the berries into the batter. Pour the mixture into the greased pan. Bake for 1 hour and 10 minutes, or until golden brown. Slice and serve warm.
