Q. I really love mushrooms. I’m wondering what the nutritional benefits – if any – might be?
Answer. You hear an awful lot about the nutritional value of “colorful” vegetables like leafy greens, tomatoes, and carrots, which might lead you to believe that relatively colorless mushrooms don’t offer much in the way of nutrition. But in terms of antioxidant activity, the humble white button mushroom actually trumps that of carrots, tomatoes, and green beans!
