Ask the Diva: What’s so “Miraculous” about Shirataki Noodles?
Q. I have read and heard a lot about the shirataki noodles aka “miracle noodles”. Are they really as amazing as everyone touts them to be?
Answer. Shirataki noodles are a type of low-carbohydrate pasta that are low in calories (and digestible carbs) and have minimal impact on your blood sugar. For low-carb dieters, I guess having pasta back on the menu feels like a “miracle.” Whether or not you find them to be a palatable substitute for regular pasta is a matter of individual preference.
