Q. I’m growing carrots and the tops are a lovely, dark green. I can’t find any nutritional analysis for that part of the carrot that most people throw away. Can we eat them?
Answer. Actually, there’s a reason that carrot greens are traditionally discarded. As nutritious as they may look, they contain an alkaloid that, if consumed in sufficient quantities, could make you sick to your stomach. The alkaloids also impart an unpleasant bitter taste—perhaps that’s nature’s way of discouraging us from eating them. Although you’d probably get away with munching a few carrot greens now and then, they’re really best in the compost bin and not the salad bowl.
