Easy Family Dinner Recipe: Salsa Verde Pork

For those of you who don’t think you have time to make a healthy family dinner, I’d like to introduce you to Salsa Verde Pork. It’s so easy to make, I don’t even think I can call it a recipe.

Here is what you need:

A pork roast (1 ½ to 3 lbs, depending on how many people you are feeding)

One or two jars of salsa verde (I use one jar for every 1½ lbs. If the roast is bigger than that, I put in two jars)

Jalapeno hot sauce – only if you like it spicy

Corn tortillas
-
Mexican style shredded cheese
-
Sour cream
-
A crock-pot

Instructions

Remove the pork from the packaging and put it in the crock-pot

Pour salsa verde over the pork

Add half a jar of water
-
Add jalapeno hot sauce to give it a little kick
(about 1 tablespoon)
Those 4 steps probably took you about 2 minutes to complete, right? Now, turn your crock-pot on low for 6-8 hours.
Right before it’s time to eat, pull the pork pieces out of the crockpot and shred the meat. Return the shredded meat back to the crock-pot and mix with the remaining juices.
Quick and Dirty Tip: If you have a Kitchen Aid mixer, toss the meat in the bowl, put on the paddle attachment, and turn it on low. Add about Âľ of the juices from the crock-pot, and watch the roast turn into the most amazing shredded meat ever!
Now, all you need to do is heat the tortillas on the stove, and let your family assemble tacos using the cheese and sour cream. If you’re feeling super ambitious, you could also add some sautéed onions and green peppers, or a variety of other taco toppings, too. If not, the tacos will be delicious with just the cheese.
This meal literally takes 3 minutes in the morning, and 15 minutes right before you eat. And once you try it, it will quickly become a staple in your weekly family dinners!
