Ask the Diva: What’s the Deal with Kabocha Squash?
Q. I love kabocha squash but I cannot find nutrition information on it anywhere. Can you help me out?
Answer. For those who are not familiar with it, kabocha squash (aka Japanese pumpkin) is a variety of winter squash that looks like a cross between a large acorn squash and a small pumpkin. Green on the outside, the flesh is bright orange and sweet when cooked. The nutritional make-up is very similar to acorn or butternut squash.
