Q. In order to get a serving of vegetables at breakfast, I’ve been making vegetable and egg-white omelets. I hate wasting the yolks, so I purchased a carton of egg whites. How do egg whites in a carton compare to a real egg?
Answer. Vegetables at breakfast? Be still, my beating heart!! Good for you! Nutritionally, pasteurized liquid egg whites are identical to egg whites in the shell. But why throw out the yolks? Most people can eat one or two egg yolks a day without any negative effect on their blood cholesterol levels or their risk of heart disease. Plus, the yolks contain valuable nutrients including beta-carotene, vitamin D, choline, selenium, and omega-3 fatty acids!
