Recipe: Baked French Toast Casserole with Streusel

Baked French Toast Casserole with Streusel
Streusel Ingredients
- 2 cups packed light brown sugar
- 1 cup chopped pecans
- ½ cup salted butter, sliced (1 stick)
- 4 teaspoons ground cinnamon
Casserole Ingredients
- 12 cups cubed, hearty bread (wheat, sheepherders, or challah are best)
- 8 large eggs
- 3 cups milk
- ½ cup white sugar
- ½ teaspoons salt
- 4 teaspoons vanilla extract
- maple syrup for serving
Directions
Combine all streusel ingredients in a bowl, mixing well until it makes small chunks. Cover and keep in the refrigerator to chill.
Grease the sides and bottom of a 9″ x 13″ baking dish with butter. Place the bread cubes in dish.
In a large bowl, combine eggs, milk, sugar, salt, and vanilla, whisking to thoroughly incorporate. Pour egg mixture evenly and slowly over the bread cubes. Gently toss to ensure even coating of all bread cubes.
Cover and place in the refrigerator overnight to chill.
When ready to bake, preheat oven to 3500. Sprinkle the streusel evenly over the top of the bread/egg mixture.
Bake for 45-60 minutes, or until the topping is browned and bubbly.
Allow to cool about 10-15 minutes, and serve warm with maple syrup.
