Ask the Diva: What’s a Serving of Dried Fruits or Vegetables?
Q. How do you measure serving sizes for dried fruits and vegetables? For example, if one serving of fresh tomatoes is 1/2 cup, how many sundried tomatoes is equal to one serving?
Answer. As a (very) general rule, the serving size for dried fruits and vegetables is one-half that of whole. So, ¼ cup of sun-dried tomatoes or dried apricots would be equivalent to a half-cup serving of fresh tomatoes or apricots.
